Paramount Coffee Project (PCP) in Surry Hills, Sydney, is a collaborative venture between Jin Ng of Paramount House, Mark Dundon of Seven Seeds, and Russell Beard of Reuben Hills. Established in 2013, PCP aims to offer high-quality coffee in an unbiased environment, emphasizing transparent sourcing and fostering relationships among producers, roasters, and brewers. The menu features a rotation of local and international roasters, selected through blind cuppings for their exceptional cup quality and flavor profiles, alongside PCP’s own transparently sourced roasted coffee.

Beyond coffee, PCP offers a culinary experience with a seasonal breakfast and lunch menu highlighting local produce and innovative flavors. From indulgent waffles to savory wraps and salads, the menu caters to diverse tastes while maintaining a focus on quality and creativity. The cafe, situated within Paramount House, boasts a striking architectural design characterized by high ceilings, polished concrete, white subway tiles, and elegant black accents, creating an inviting space flooded with natural light.

PCP also operates in Los Angeles, with a branch established in Fairfax West Hollywood in 2015, followed by a Downtown establishment. The LA location mirrors the Sydney counterpart’s commitment to showcasing a variety of beans and roasters, offering a multi-roaster showcase that allows patrons to explore different interpretations of featured green beans.
