Bills, founded by owner-chef Bill Granger, has expanded from its seminal cafe in Darlinghurst to 13 locations worldwide, including Sydney, London, Japan, Seoul, and Hawaii. Despite its global presence, each outpost maintains the same high standards and signature dishes that have made Granger’s name synonymous with Australian breakfast culture. The Surry Hills location, like its counterparts, embodies Granger’s breezy style, offering Single O coffee, vibrant salads, and crowd-pleasing cafe classics throughout the day.

While Granger may not be as hands-on, Bills Surry Hills continues to uphold its reputation with a modern dinner menu alongside its beloved breakfast offerings. The restaurant’s recent relocation to the former Marque space next door has revitalized its atmosphere and design, featuring a blend of art deco and Tuscan influences, complemented by Australian artworks and vibrant green accents. Despite the aesthetic update, Bills remains true to its tagline of serving “Aussie breakfasts” with sunny, easy-going vibes.

The menu at Bills reflects Australia’s diverse culinary influences, incorporating dishes like chilli miso salmon with hot and sour eggplant and crab and lemon linguine alongside traditional favorites like ricotta hotcakes and creamy scrambled eggs. While the new menu offers more variety, Bills Surry Hills still shines brightest with its iconic dishes, ensuring that patrons won’t be disappointed when seeking out the restaurant’s legendary fare.
