A.P House (A.P Bakery)

A.P. Bakery, situated on the rooftop above Paramount House in Surry Hills, is far from an ordinary bakery. The name “A.P.” stands for “all-purpose,” highlighting its versatile offerings. The bakery is spearheaded by some of Sydney’s most esteemed hospitality figures, including Ping Jin Ng, Russell Beard, and Mat Lindsay, along with head baker Dougal Muffet, who is known for his commitment to using heirloom Australian wheat varieties grown through sustainable farming practices.

Muffet and his team mill their grains in Marrickville with an American-made stone mill, ensuring high-quality bread that can be found at various A.P. locations, including Newtown, Martin Place, and Carriageworks Farmers Markets. The bakery offers an impressive array of products, from baguettes and tartine country loaves to Jerusalem bagels, all noted for their exceptional quality.

The rooftop bakery also features a full cafe menu brimming with delightful carb-heavy options. Popular items include a crisp bacon sandwich with curry leaf butter, sesame bagels with seasonal fillings, and various toasts. Complementing these offerings is coffee sourced from Reuben Hills, ensuring a top-notch caffeine fix for patrons.

The 40-seat venue, adorned with potted greenery, provides an urban oasis with stunning views of the city high rises. With umbrellas and awnings ready for any weather, the bakery presents a tough choice for brunch between its rooftop and the Paramount Coffee Project downstairs. A.P. Bakery, open Thursday to Sunday, serves an array of viennoiseries, pizzas, and breads, along with a selection of unique beverages including Latta Vino wines, Wildflower sour ales, and Hawke’s Brewing lager, making it a standout destination in Surry Hills.
