Bills in Double Bay, inspired by restaurateur Bill Granger’s fondness for Vienna’s grand cafes, offers a refined yet casual dining experience with attention to detail evident in its tan leather seating and minimalist decor. While classics like sweet corn fritters and ricotta hotcakes remain on the menu, guests can also enjoy refreshing options like the buckwheat bowl and mixed seed bircher. Global development chef Louis Solley, previously of Ottolenghi, maintains the signature breakfast and lunch dishes that have made Bills a staple of Australian breakfast culture, alongside new offerings like green-pea falafel with fennel and herb salad.
Drawing from Granger’s culinary experiences, dinner at Bills Double Bay features a variety of dishes inspired by his favorite flavors, including plays on Austrian schnitzels, a raw bar offering Sydney rock oysters, simply grilled fish or steak, and a chicken, pea, and leek soup. The restaurant’s handsome dining room, designed by Meacham Nockles, features tan leather banquettes, rattan chairs, gilt-edged and timber tables, and eye-catching sconce lighting. Outside, glossy black chairs complement orange tables on the footpath, creating an inviting ambiance for guests to enjoy Bill Granger’s culinary creations in a warm and stylish setting reminiscent of its predecessors.
