Fiore Bread in McMahon’s Point, is a tiny sourdough bakery founded by Samantha Dean and Alberto Dal Bosco, a former baker from Iggy’s Bread. Modeled after the Italian alimentari, Fiore Bread offers a variety of high-quality breads, pantry staples, and more for takeaway. The bakery emphasizes sustainability by using heritage and ancient grain flours from Wholegrain Milling in Gunnedah, known for preserving old-world wheat varieties. Their dough undergoes a three-day fermentation process, resulting in loaves with a dark, sturdy crust and a moist, flavorful crumb.
The bakery’s daily bread selection varies, featuring options like wholemeal with walnuts and sweeter loaves with cacao and hazelnut. In addition to traditional loaves, Fiore bakes sourdough brioche and a version of Iggy’s famous wheel, a cluster of panini rolls. These individual rolls are used to make daily sandwiches with fillings such as mortadella, LP’s salami with sharp Italian cheese, tomato, bocconcini and basil, or roasted eggplant. Fiore Bread also offers a range of unique products including Ultra Culture hot sauces, Lulu’s Remedy chili oil, Mount Zero olives, and Olasagasti anchovies, along with milk, butter, house-made granola, and deli meats.

Fiore Bread is named after the Italian word for flower, highlighting their focus on flour. The bakery’s design by The Make Haus incorporates original terrazzo floors and stained-glass windows, complemented by funky stools from Italian designer Martino Gamper. Patrons can enjoy their coffee and panini while basking in the sun outside the bakery. Located on Blues Point Road, Fiore Bread brings a slice of Italy to McMahon’s Point with its limited but high-quality offerings centered around their hero product: sourdough bread.

Alberto Dal Bosco, who co-founded Fiore Bread, aims to keep the bakery’s offerings simple yet exceptional. He focuses on bread, panini, and a few select items like bombolini and condiments. Having arrived in Australia in 2014, Dal Bosco transitioned from engineering to the food industry, gaining experience at various establishments before launching Fiore Bread in mid-2022. The bakery, identified as fulfilling a need in the suburb, has quickly become popular, with many of its products selling out early in the day. Weekends are particularly busy, featuring special items like focaccia and bombolini, making Fiore Bread a must-visit destination in McMahon’s Point.
